Spice up your usual potato side dish with these chili lime roasted sweet potatoes. This simple recipe is a crowd pleaser and tastes as vibrant as it looks. Here’s what to do.
4-5 sweet potatoes, diced into 1-inch cubes
1-2 pasilla peppers, cut into strips
1/2 red onion, sliced (about 1/4-inch slices)
extra virgin olive oil
salt and pepper, to taste
juice from one lime
1. Preheat oven to 460 degrees.
2. Toss sweet potatoes, peppers, and onion slices together on a cookie sheet.
3. Coat with olive oil and season with salt and pepper.
4. Roast in oven for about 30 minutes, stirring the veggies around once halfway through. When potatoes begin developing charred edges, remove, drizzle in lime juice and serve.
