Grilled Ginger Mint Pork Chops

  • 1 tablespoon fresh turmeric
  • 1 tablespoon fresh ginger
  • 3-4 garlic cloves
  • salt, to taste
  • 1-2 lemons, juiced
  • handful oregano leaves
  • handful mint leaves
  • handful rosemary leaves
  • dash of chile pepper
  • 1/8 cup olive oil
  • 1/8 cup medjool date syrup
  • 4 pork chops


  1. Assemble the marinade: Using a mortar and pestle, crush together turmeric, ginger, garlic, salt and lemon juice. To this, sprinkle in oregano, mint and rosemary leaves. Sprinkle in chile pepper, then drizzle with olive oil and date syrup.
  2. Pour half of marinade over pork chops and place on the grill. If you hear sizzling, flip pork chop over. Add more marinade after turning pork chops. Cook until done. This depends on thickness of chop, around 4-5 minutes per side.
  3. Remove pork chops from grill and cover with foil. Allow to rest for 10 minutes. This is a great time to grill up a vegetable accompaniment. Toss vegetables in a cast iron skillet with remaining marinade or olive oil, salt and pepper and grill over high heat. Plate and serve.
