- 1 cup kumquats, chopped
- 2 mangos, peeled and chopped
- 1 small cucumber, chopped
- 1/4 red onion, diced
- 1 jalapeño, diced (ribs and seeds removed, according to desired heat)
- 1/4 cup chopped fresh cilantro
- Juice of 1 lime
- Salt & coarsely ground pepper
